For the brownies:
Preheat the oven to 180°C / fan.
For the brownies, first mix all the dry ingredients in a large bowl. Melt the dark chocolate in a water bath/bain-marie or the microwave.
Then add the melted chocolate, the apple puree, the vegetable milk, and the oil, mix and pour into a greased tin (20x25cm) lined with cocoa powder. Finally, sprinkle the chocolate chips on top.
Leave the dough to bake in the oven for 25-30 minutes (depending on the thickness of the brownies).
For the Brownie Sundae:
Prepare the brownies following the recipe for vegan brownies (see above). You will end up with nine brownies, but you only need one for each sundae. Leave the brownies to cool after baking.
In a tall bowl, whip the vegan cream with the whipped cream stabiliser and then refrigerate.
Melt the dark chocolate in a water bath and then let it cool down a little.
Place two scoops of vegan chocolate ice cream and one scoop of vegan vanilla ice cream in an ice cream bowl. Decorate with lukewarm brownies, cold whipped cream, the melted chocolate, the brittle, and the small wafers and serve immediately.
